Strawberry Preserves!

2 quarts stemmed, firm, red, ripe strawberries
1/4 c seeded and ground lemon (i'm not sure what that means exactly but I'm going to use the juice of 1 lemon)
1 pkg pectin
1/4 c powdered pectin
6 1/2 c sugar

Combine berries, lemon, pectin, and water in large sauce pot
Bring to rolling boil, stirring gently
Add sugar. Return to rolling boil.
Boil hard 1 minute, stirring frequently
Remove from heat, stir gently 3 minutes to distribute fruit.
Pour hot into hot jars, leaving 1/4-inch head space.
Adjust caps. Process 15 minutes in boiling water bath.

Yield about 5 - 12 ounce jars

This is one thing that I think I would really like to start doing. I've dabbled in canning before, but I think economically it would save a lot of money! Organic high quality preserves are not cheap!
