Thai Wraps


Romaine lettuce
2 carrots, grated
1 stalk of celery, thinly sliced
1 onion, diced
3 cloves garlic, minced
2 chicken breasts, cooked, diced
½ c soy sauce
1 small zucchini, diced
1-2 c brown rice (great if you have leftovers!)


Wash romaine lettuce, shake off extra water, and set aside in a bowl. Shred carrot, cut onion, slice celery, mince garlic, and any other veggie that you desire. Add oil to pan.  Put in onion and garlic, cook for a minute or  so… add the rest of the veggies and chicken

Cook until warm (about 5 minutes).  Add soy sauce.       

Add rice.

Cook over medium heat for a few more minutes, til ingredients are well mixed and heated.

Serve by filling leaves with several tablespoons of meat/veggie mixture.
